Blackbean Tomato Corn & Avocado Salsa

This Blackbean Tomato Corn & Avocado Salsa is hands down one of my favorites.

Its made within 5 minutes so perfect for those nights you dont feel like cooking.

 

If you dont want corn chips then you can always serve on baked potatos or a bed of lettuce.

 

SERVES 6

INGREDIENTS

1 x Tin Black Beans

1 x Tin Corn kernals

8 x Cherry Tomatos

1/2 x Avocado

 

OPTIONAL TOPPINGS

Jar of Salsa

Grated Vegan Cheese

Vegan Sour Cream

 

METHOD

Place a strainer in the sink and empty the tins of blackbeans and corn.

Rinse under water to clean.

Place in a serving bowl.

Chop 8 Cherry tomatos into halves and place in serving bowl.

Halve the avocado and slice out one 1/2 into cubes. Place into serivng bowl.

Mix all ingredients together.

 

You can serve with corn chips, additional toppings, backed potoato or on a bed of lettuce.
