Sweet Chilli Soy Tofu Poke Bowl

These are Vegan friendly, super easy to make, weight loss friendly, healthy and soooo delicious!

 

Before you start your poke bowl, get all your ingredients out to make it easy and fast.

Lets get started!

 

INGREDIENTS

1/2 cup suchi cup rice

70g Tofu

1 tbsp soy sauce

1 tbsp sweet chilli sauce

1 cup lettuce and spinach

1/2 cup red cabbage

1/2 carrot

1/4 cucumber

1/4 avocado

1/8 red onion

pickled ginger

mayonaise for serving

soy sauce for serving

 

INSTRUCTIONS

In a rice cooker or stove cook rice per packet.

While the rice is cooking heat a frypan and add sliced tofu, sweet chilli sauce and soy sauce.

Stir tofu through the sauces coating each peice. Flip tofu over to cook other side. Repeat until crispy.

Turn of heat and set aside to cool.

With a peeler slice carrot and cucumber into thin strips. Set aside.

Slice red cabbage into thin shreads. Put aside.

Slice red onion into thin slices and chop finely. Put aside.

 

In a bowl place cooked rice on the bottom.

Around the side place the tofu, lettuce, spinach, carrot, cucumber, red cabbage, onion and avocado.

Place picked ginger ontop and add mayonaise and soy sauce to taste.
