Vegetable Noodle Soup
I love how simple cheap and deliciously nutritious this easy Vegetable Noodle Soup is.
This is a staple go-to meal in our home because its a winner dinner with the kids.
If you dont like the vegetables we've used or you want to add extra vegetable (bok choy goes well), you can adjust the recipe to suit with this Vegetable Noodle soup as it wont affect the flavour.
SERVES 4-6
INGREDIENTS
1 tbls x Garlic
1 x tbls Ginger
1 x Red Chilli (Green works fine too)
2 Litres Chicken stock (Massel is Vegan)
2 tbls Soy sauce
3 tsp Sesame oil
250g Noodles (We use Changs or Udon noodles)
1 x large head of Brocoli
2 x Carrots
1 x Capsicum
Corriander to serve
METHOD
Put a large pot on the stove and turn on to medium heat.
Add either a of dash of olive oil/coconut oil or water if not using oils and heat through the garlic, ginger and chilli.
Then add chicken stock to the boil.
Then add sesame oil and soy sauce.
Then add noodles and vegetables.
Boil (without lid) for a few minutes until vegetables are slightly cooked.
Turn off heat and sprinkle through corriander.
Serve into bowls.
